Typical books about preserving garden produce nearly always assume that modern "kitchen gardeners" will boil or freeze their vegetables and fruits. Yet here is a book that goes back to the future—celebrating traditional but little-known French techniques for storing and preserving edibles in ways that maximize flavor and nutrition.

Translated into English, and with a new foreword by Deborah Madison, this book deliberately ignores freezing and high-temperature canning in favor of methods that are superior because they are less costly and more energy-efficient.

As Eliot Coleman says in his foreword to the first edition, "Food preservation techniques can be divided into two categories: the modern scientific methods that remove the life from food, and the natural 'poetic' methods that maintain or enhance the life in food. The poetic techniques produce... foods that have been celebrated for centuries and are considered gourmet delights today."

Preserving Food Without Freezing or Canning offers more than 250 easy and enjoyable recipes featuring locally grown and minimally refined ingredients. It is an essential guide for those who seek healthy food for a healthy world.

CUSTOMER REVIEWS:

Just a little bit of great information - 33333
First quarter of the book is very promising and then transitions into a plain old nifty recipe book. I was expecting a more informative/instructional preservation manual than just recipes.

great book! - 44444
I'd give it 5 stars if it had an index explaining some of the obscure ingredients, but I really like this book anyway and have refered to it to help preserve my strawberry harvest. Will soon be drying some herbs, and in the fall I'm sure some of the methods will help preserve some of my backyard garden harvest. Definitely worth the price for me.

Not for beginners - 22222
As some other folks have noted, this book is very much for people who already have some decent experience with food preservation. There are some interesting ideas but a complete lack of details and some just plain dangerous suggestions. For example, the notion that you can throw some raw garlic cloves into a bottle of olive oil and leave it to stew in the sun for several months is beyond irresponsible. If you don't know why I'm saying that, you shouldn't buy this book. Instead you should go google "garlic in oil".

PREPARING HOME STORAGE - 55555
I like this book. It is well organized and tells how to organize food storage and how to use it.

Seeing what happened during Katrina it became necessary to think a little of what if's! KY experienced Hurricane Ike last September and many were without electric, and services for weeks! Things happen and it is always good to be prepared! Guess it is from Scout background but they are right! One can store as they have room or see fit for their needs.

I recommend this book. It is an easy book to read and follow.

A Plethora of Life-Sustaining Flavor - 55555
This detailed and inclusive book includes all of the old-style methods of food preservation that came before canning and freezing technologies. With detailed instructions (sometimes several sets for each method) and discussion of why each method is used (or not) for varying foods, this is the perfect primer for anyone interested in learning alternative food preservation methods.

An ideal resource and companion for anyone looking to return to a simpler style of living.

Old-time recipes & tools for the modern era. A serious must-have for any gardener, survivalist, primitive skills enthusiast, or food-lover.
